Ras malai or rossomalai is a dessert originating from the eastern regions of the Indian subcontinent. The word rosh, means "juice", and molai, means "cream".

Rasmalai ingredients:
1 litre toned milk for chhena
1 litre full fat milk for rabdi/ras
2 tbsp vinegar/ lemon juice
1 tsp cornflour or maida
250 gms sugar for sugar syrup
150 gms sugar for rabdi
½ tsp cardamom powder (elaichi powder)
Few strands of saffron (kesar)
½ cup chopped nuts (almonds, cashews, pistachios)
Pinch of yellow food colour (optional)
